On the Menu: Creamy Cauliflower Soup


You would think that by now I would be accustomed to cold weather since I am from Portland, but I’m a total wimp. The temperature has fallen to the thirties at night and all I’ve been wanting is a comforting warm bowl of soup. That’s when I call on food contributor Susan of Peas and Love to help me out with a go-to easy recipe. When she started listing off soups we could make, this creamy cauliflower soup stood out – plus Susan mentioned it was one of her favorite detox meals (bonus!).


Friends, when I took my first bite of this soup, my entire body warmed up and it was singing with glee. The flavors of this soup are divine and the little sprinkle of paprika on top makes it have a little zip. Hope you enjoy this soup as much as I did.

Creamy Cauliflower Soup


Ingredients

 

1 Head Organic Cauliflower, halved 1/2 a small Yellow Onion 3 small Organic Potatoes 1/2 cup of Coconut Milk 1 Tbsp Bragg’s Liquid Aminos Salt to taste Black Pepper and Paprika to top


Directions

 

In a large pot bring together the cauliflower, onion, and potatoes and boil for 30 minutes over medium heat. Drain water, and transfer contents from the pot to a blender, adding in coconut milk, liquid aminos and salt. Blend on high for 1 whole minute. If you have a less than turbo blender, stop occasionally to scrape down sides and give it little stir. Then blend some more until creamy consistency is achieved. Transfer directly to a bowl and drizzle over olive oil. Sprinkle some black pepper and paprika on top and serve!


Side Note:

This creamy cruciferous soup is a guaranteed crowd (and belly) pleaser- and perfect for staying cozy during these wintry months. Cauliflower is totally underrated but they provide excellent digestive and detox support due to the mighty amounts of antioxidants, omega 3′s, dietary fiber, protein, B Vitamins, Vitamin C and Vitamin K- which regulate inflammation. Don’t take antioxidants for granted, for they protect you against free-radical damage and many diseases.
